The Executive Chef:
His passion and his hunger for knowledge bring him to London, where he works in the renowned and luxurious “Locanda Locatelli” and at “NOBU”, forerunner of the fusion cuisine.
He then comes back to Italy, where he starts his experience at “Cracco” in Milan and cooperates with some of the best chefs in the world.
In February 2012 he comes to Principe, where he cooks traditional Tuscan dishes with a contemporary twist.
Our Chef Valentino Cassanelli was born near Modena, land of great culinary tradition.

Daniele Arcangeli, member of the Italian Sommelier Association (AIS) "Vintage 1976" is our Restaurant Manager, and he personally takes care of the selection of our precious wine cellar with great passion.Passionate about wine & food and the whole “beverage” planet, Daniele starts his career in the luxury hotel and food & beverage world at the age of 15 during the summer season right here in Versilia. His professional background has been enriched over the years by experiences in the large hotels and the historical mansions of Relais & Chateaux, Starwood Luxury Collection and Leading hotels of the World, and thanks to updating management classes in Europe and Asia. Winner of the Bonaventura Maschio “The Pursuit of Excellence” National Award in 2008 for his knowledge of the world of brandy, Daniele has often been one of the best sommeliers in Tuscany and in 2011 he was elected the 3rd Best Sommelier in Italy at the “Franciacorta Award”. In 2010 Daniele was selected for the book “Cocktails from Bars of Leading Hotels of the World” as one of the best 50 bartenders in the Leading Circuit in the world.
